if you can bear to get up at the crack of dawn or stay up all night in ginza, you absolutely must check out the auction at the tokyo fish market. everything at the fish market is completely surreal. also, if you want to try the freshest sushi you will ever have the opportunity to eat, wait for the sushi restaurants to open at 8am. breakfast sushi sounds a little weird, but the experience is beyond description.
